Rainbow Pizza

Ok, so this recipe is a bit of gay fun and completely ridiculous, but it’s good for you, so who are we to argue?

So simple to throw together too.

Grab a couple of naan breads, or pitas, top with pizza topping paste, just slap it on! If you want a sprinkle of cheese, here’s the trick, put it UNDERNEATH your veg! You get the gooey melted goodness, and your veg shines through.

Then chop up your rainbow veg; red capsicum, orange carrot or sweet potato, yellow corn or tomatoes, broccoli and pickled purple cabbage, or eggplant.

Show your big gay pride and layer them over your pizza base and bake for 15 - 20 minutes until your veg are cooked through.

If you are using harder vegetables such as sweet potato, simply pre-cook slightly, or cut them into smaller pieces, the idea is that everything cooks at the same time, so cut your veg accordingly.

Pickled cabbage sound a little exotic? Nah, just chuck your cabbage in a bowl, cover with vinegar, a teaspoon of salt and a teaspoon of sugar and let it work its magic in the fridge for a couple of hours, drain well before adding to your pizza, because no one likes a soggy bottom!
